Convection Ovens
(NOTE: Check the Convection Cooking page for general guidelines and tips for convection cooking.)
Q: Why do my muffins and cakes with runny batter bake unevenly?
A: Try lowering your baking temperature 25F degrees. Many times a minor adjustment in the temperature will solve your uneven baking problems.
Q: Why does a convection oven cook foods faster?
A: Cold food radiates a layer of cool air between the food and the hot air in the cooking cavity. Convected air makes this layer of air, or insulation, smaller and allows the heat to reach the food faster.

Warmers and Kettles
Q: Can I heat soup in the Cadco soup kettles?
A: We do not suggest heating soups in the Cadco soup kettles. The Cadco soup kettles are perfect for keeping hot soups at safe serving temperatures.
Q: Can I use the Cadco soup kettles for holding anything other than soups?
A: Stews and chili work well in the soup kettles. Try keeping sauces in your soup kettle and have it placed so the wait staff can “finish” the nightly special or the more popular lunch items.
Q: We sell a lot of soup but I only have one outlet for a soup kettle.
A: Cadco makes double capacity soup warmers that will solve your production problem. (Models DWW-2 & DWW-11)
Q. My operation serves soups out of steam table pans for maximum production. Does Cadco have a product that will help us?
A. Cadco has a line of soup warmers that are perfect for holding steam table pans. The DWW/FSW series soup warmers can also be used in buffet applications and for entrees.

Warming Trays
Q: I have used heat resistant dishes on my warming tray in the past, but can I place food directly on the surface of the unit?
A: Yes! And it makes a beautiful presentation! Mini pizzas, and Quiches are kept hot and look great when served on the Cadco warming trays. Clean up of the stainless surface is a breeze with mild soap and water. Use a sheet of parchment as a liner if desired.

Toasters
Q: The pop up lift on my old toaster quit “popping up”! Will the “Keep Warm” feature break on my Cadco/Dualit toaster?
A: When the Army puts a toaster on a tank, Cadco’s will be the toaster they choose. These are built to be sturdy, as well as, reliable for years of trouble free service
Q: How come my toast didn’t pop up when it was done?
A: That is Cadco’s unique “Keep Warm” feature, and it will keep your toast warm even if you can’t get to it right away. “Keep Warm” also allows you to easily monitor the progress of your bagels during the toasting process.

Buffet Servers
Q: My staff occasionally puts too much water in the chafing dishes and it spills or boils over making a mess on the buffet tables.
A: The Cadco Buffet Servers don’t use water so they can’t be overfilled and cause a mess or endanger your staff.
Q: How can I get my staff to keep the chafing dishes full and the fuel from going out?
A: Years of food service experience have taught us “You can’t bend a rock”. The Cadco Buffet Warmers are electric so they don’t go out, they don’t need fuel, they don’t need water. All you have to add is FOOD and you’re ready to go!
Q: Do I need special sized pans for the Cadco Buffet Warmers?
A: No! Our Buffet Warmers are built around the standard 12”x20”x2 ½” steam table pan and the 1/1 Euro pan. These pans have been standards for the food service industry around the world, for years.
